Pistachio-Stuffed Dates
Sweet yet salty, soft yet crunchy, these make a fun snack, especially for  kids. They have just two ingredients and require no cooking. These are a little reminiscent of the  old favorite “ants on a log.” Hmm. Maybe “turtles canoes”? Perhaps my readers can come up with a better name.
Dates, though high in carbohydrates, also include fiber and vitamins. And pistachios bring fiber, antioxidants, protein and heart-healthy fat, making this a very healthy dessert.
I used deglet noor dates, but juicier medjool dates work even better.
Serves 4
Ingredients:
1 cup pitted dates
1 cup roasted, salted pistachios.
Directions:
Shell the pistachios.
Use knife to slice dates in half lengthwise. Fill each half with one or two pistachio kernels. Serve at room temperature.
