Clean Barbecue Sauce
Most barbecue sauce is loaded with added sugar. But the sweet-sour tang in this sauce comes from dried fruit, which add fiber and vitamins, too.

Makes about 3 cups of sauce

1/3 cup dried apricots, chopped
1/3 cup chopped dried dates
6-ounce can tomato sauce
1 2/3 cup water
1/2 teaspoon salt
optional: 1/2 teaspoon ground ginger
optional: 1/2 teaspoon smoked paprika
1 tablespoon sherry vinegar (or other vinegar)

Place all ingredients in saucepan. Bring to boil, reduce heat, cover and simmer for 10 minutes. Remove from heat and carefully blend with immersion blender until smooth. Slather over grilled chicken, fish, vegetables or whatever you like.
Refrigerate any leftovers, or freeze in an ice cube tray.
