Spring Radish Spread
(Adapted from Farmers Market Cookbook by Susan F. Carlman)
Quick and colorful spread that tastes great with veggies, whole-grain crackers or onion biscuits.

Makes about 2 cups of dip
8 ounces Neufchatel cream cheese
1 chopped green onion
1/4 teaspoon salt
1 cup finely chopped radishes

Combine in a bowl and serve. Refrigerate leftovers. Tastes better after a few hours in the fridge to marry the flavors.
