Carrot-Ginger Miso Soup
Miso soup is a Japanese comfort food. The carrots and leeks in this version add even more flavor and antioxidants.

Serves 4
Ingredients:
2 cups chopped carrots
2 cups chopped leeks
1 quart ginger-miso broth

Directions:
Combine all ingredients in saucepan and bring to boil. Reduce heat, cover and simmer 10 minutes or until vegetables are tender.
