Matthew’s Radish Salad
My son, who is not quite 3 years old, does not like too many vegetables, including tossed salads and dressings, as of yet. So I was happy that he invented this simple salad himself from leftovers in our refrigerator. The longer you marinate the radishes in the lime juice, the more tender they become. They also turn a pretty, rosy pink.
Serves 4
Ingredients:
2 cups thinly sliced radishes
Juice of one lime
Directions:
Combine ingredients and serve.
