Lemon-Garlic Sugar-Snap Peas
Sugar-snap peas are one of my favorite vegetables and taste so wonderful this time of year.

Serves 2
1 tablespoon olive oil
1 clove garlic, minced
2 cups sugar-snap peas
Zest of half a lemon—about 1 teaspoon

In large skillet, heat oil over medium. Add garlic and peas and stir-fry until peapods are  tender-crisp, about 5 minutes. Remove from heat, stir in lemon zest and serve.
